In this guide I will detail the locations of all 36 Unique Jumps in Vice City, with digital photographs (crap ones, but they do the job) to assist. Each description will have rough area information, with more accurate location information and what, if any, form of transport you will need to carry it out (mostly you'll be wanting a PCJ-600, but some jumps you can get away without it).
The Jumps are listed in rough order of south-to-north on the East island, then Prawn Island, followed by Starfish Island then north-to-south on the West island. However, unlike the Rampage/Package guides, some jumps must be collected in a certain order, and some just make more sense that way. So it's a very rough order... The guide is split into two parts - the 18 on east island which are attainable without having made any other progress in the game, followed by the remaining 18 on Prawn Island, Starfish Island and west island (which are also technically attainable without having made any other progress, but require a bit of sneakiness...)
The Jumps each carry a $100 reward for completion, increasing by $100 every time you successfully complete one. You'll know if you've hit a jump correctly, as a slow motion, cinematic replay will ensue - but you are not always guaranteed a successful Jump unless you also land in the correct place - I'll attempt to detail this too.

This jump along with jump 2 are not available until after you complete the mission "Phnom Penh '86". At all (or if there is a method, it's far too contrived to bother with). You need to go to Ocean Beach Marina - on the southwest of the east island. In the marina there are two piers - the southern one is where you take missions from Colonel Cortez. You need to head through the northern one. As you reach the T-junction of jetties, turn left and stop. This is the start of your run-up.
A PCJ-600 is the only way to do this jump, with the subsequent jump, and survive. Believe me. You'll certainly want to raise the nose while in the air, but, as with a Spitfire, you must slam that nose wheel onto the ground again afterwards at the same time the rear wheel lands - you don't want to be off line... Honestly.

As with jump 1, this is unavailable until after the mission Phnom Penh '86 - and for good reason, as it continues from jump 1.
As you land from jump 1, keep that throttle mashed to the housing and hit the second ramp. As with the last one, you'll need to keep the nose wheel up for the duration of the jump. And you'll certainly want to brake afterwards, or you'll end up in the drink. The only way to get out of this area now, unfortunately, is to turn left and try to hit yet another jump pver water - although this isn't a Unique Jump - or ditch the bike and grab a boat. Good luck.

Go to the Ocean Beach Pay'n'Spray - it's more or less due east of Jump 2. Head north on that road, then take the next left. You'll see an alleyway on your left - head down it until you reach the corner in it. Now turn right around and get ready to blast... The jump itself is a set of white steps, aiming due south.
This jump will seem familiar to anyone who's down the "PCJ Playground" side game. Whereas it's best on PCJ Playground to aim slightly to the right of the steps in order to collect a checkpoint, it's better for this jump to aim slightly left, as you are heading straight on to another jump. A PCJ-600 is the only vehicle for the job here.

From Jump 3, head straight for the pink ramp ahead of you (yes, pink). It's very tough to line yourself up, as you only get a second from the cinematic from the previous jump ending to you hitting the ramp.
Very tough to get this one right for take-off. Even harder for landing. The award of the Jump seems very arbitrary - but people swear that hitting the roof in the recess of the building opposite will do it (hitting as in smashing into). I hold no truck with that at all, from about 100 attempts' experience. If you get it, you get it. Just drive as hard and fast as you can and it'll come to you in the fullness of time. I hope.

Head to the multistorey carpark near the Ocean View Hotel - it's practically due west of it - where there was also a rampage, and the scene of the Cone Crazy mission (and where you meet Lance in the "Guardian Angels" mission. Busy place). Drive up to the roof. In the southwest corner of the roof is a ramp. You need to go to the northern edge of the car park and hit the north-facing part of the ramp.
No specific vehicles are needed - but a PCJ-600 is always a favourite. There's no set landing point either, as far as I'm aware. Just mash it.

Head up to the top of the Washington Beach mall car park (up the spiral entry ramp). When you reach the top, go around to the southwest corner, and aim east. You'll drop down a ramp at first, then hit a slight upward ramp and hopefully clear the wall at the top for the jump.
Again, no specific vehicle is needed, but you always stand a better chance with the PCJ-600. As long as you land on the building opposite, you'll be guaranteed success (in theory anyway). Keep hold of the vehicle, because Jump 7 is on this roof also...

Now, get back on the bike (chances are you've developed a mild headache from the last jump). There is a set of stairs ahead of you. Drive straight up and over them and you'll come down on a slightly lower roof on the other side. You'll see three vents ahead of you - one pointing north, the others pointing west. Head for the one in the northeast corner - this is your ramp.
You'll most likely still be on the PCJ from the previous jump, so there's no point changing. It still gives you the best hope. There's no set landing zone - but the roof makes a decent target.

Now go back towards the Ocean View Hotel. Pass it, heading south, then take the next right and stop. On your right is an alleyway - and a bloody long one too. A little way up, on the left side of the alley, you'll see a wooden packing crate - this is your ramp...
Most things will do this jump, but you need to land on the roof alongside. Once again, PCJ is your man...

Just north of your (crash) landing position from the last jump is another packing crate, but this time the jump leads south. Go a little way north and gun it back. You may find it useful to glance off the wall on the right before take-off, to help align yourself better.
It's generally held that to make this jump successfully, you must land in the alleyway, beyond a telegraph pole (you'll see it... trust me). The only way to do this is with... a PCJ-600...

Head back to the north in the alleyway until you reach a set of steps leading south - this is your next ramp. To help orientate yourself, just a little to the north is a police bribe icon.
Again, grab the PCJ-600, go to the north of the jump, turn round and blast it. Landing on the roof of the next building will usually give you the jump.

Go to the north in the alleyway and you'll see yet another set of steps leading south - you may remember Tommy standing on them during the "Guardian Angels" mission (or you might not. Or you haven't done it yet...). This is your ramp this time.
Head north again - right to the end of the alleyway should do it - before turning south again and riding very fast again... Anyone see a pattern developing? You should note that when you're screaming down the alley, you're aiming for the steps on your right (the west set) and not the set on your left, which also have a south facing ramp. But we'll come back to those later.

But not much later. Remember that other set of steps from jump 11? Well, you're going to jump them east-to-west. Line yourself up very carefully and drive out towards the beach wall. Prepare to drive very fast indeed - but beware of traffic and that damn light pole.
This jump requires you to land on the patch of grass around the Washington Beach Police Station to pass it. PCJ is your only hope. You'll certainly have to repeat it a few times (if you're lucky).

Get back to your feet (he predicted), get back on the bike and head south - but not too far! At the next left turn you want to stop, face straight down the road and reverse a little to get a good run up. Then hoof it. Your ramp is another one of those high-pressure steam pipe-carrying concrete triangles dead ahead, and it'll jump you across a river.
Almost ANY car or bike can do this one. Except maybe the Caddy and Baggage Handler...

Now turn straight around. Just on the other side of the river from your last jump is a bank of sand, which forms your next jump. There is no clear line-of-sight run-up for this jump, so I prefer to go all the way up to the Starfish Island gates to start my run. As you pass the green fencing to the rear of "Bunch Of Tools", pull the vehicle hard right and hit the jump square. I have experimented with other angles - including coming from the apartment complex down the steps, but the kerbs affect almost all cars and make the jump less predictable.
Almost anything will do this jump too. PCJ is my preference, but there's a chance it'll be thrown off by the kerbs - sometimes ejecting you too... There's usually a Phoenix or Cheetah parked in front of the Bunch of Tools, if you'd prefer.

Go to the five-way crossroads outside the Washington Beach Police Station. You'll see that on the southeast side there is a wooden ramp (and another, slightly higher up), which is also the start of the PCJ Playground Mission. This is your ramp...
Almost anything is good enough for this. I registered a jump here whilst doing this guide with a Faggio. Yes, really. All you need to do is hit the ramp and land on the roof...

Back to the five way crossroads again. This time look to the northwest side, and you'll see a concrete ramp up against the bridge. Turn to the north and drive up to the Malibu, then turn it round and gun it down the grass.
You must clear the bridge for this jump to count, so any reasonably quick car will do. A Taxi with the boost jump (from completing the Taxi Driver mission) will register a very, very high jump here and is good for a laugh. The landing area is crowded, so you may be better off with a car than a PCJ.

Just where you started your run for the last jump - outside the Malibu - you may have noticed a concrete ramp over the river on your right... This is the next ramp
A pretty tricky one to clear - as the run-up is so short. I put myself in the car park across the road just east of the Malibu. A Cheetah is adequate for this jump, and may be a better bet than a bike, given the landing area.

Head to Avery Carrington's building site. Go up the ramp onto the building, then up the next two levels. You'll come across a red girder (or "I-beam") pointing roughly northwards. This is your ramp. Yes, really.
Since nothing but a bike can get up here (well, you can chopper in, but they aren't much use for a jump), you'll be on a bike. You need to ramp off the girder and hit the building opposite, so really only a PCJ-600 is fast enough for the task.
